Energizing Morning Parfait

The recipe is a little breakfast treat to get your day started in the best way possible. For a quick assembly, prep the banana cream the day before. You can also add fresh finely chopped fruit like apples or berries. Refrigerate for up to two weeks!

Serves 2 | Prep 10 Min

Ingredients

  • 1/3 Bag Maroon Bells Booster
  • 1/3 Bag Grizzly Lake Granola
  • 10 Medjool Dates
  • 3 Ripe Banana 
  • 2 Teaspoons Raw Local Honey
  • 1 Tablespoons Almond Butter 
  • 3/4 Cups Organic Oat Milk 
  • 1/2 Cup Organic Yogurt
  • 1/2 Cup Warm Water 

Ingredients

  • 1/3 Bag Maroon Bells Booster
  • 1/3 Bag Grizzly Lake Granola
  • 10 Medjool Dates

Instructions:

To prep the banana cream: 

  • Chop the dates and discard pits. 
  • Soak the dates in warm water and oat milk for 30 minutes.
  • After soaking, blend dates until smooth.
  • Blend bananas with the dates.
  • Put banana cream in a small container.

To assemble the parfait: 

  • Crush the Maroon Bells Booster in a small bowl.
  • Mix into the bowl the Grizzly Lake Granola.
  • Grab 2 small drinking glasses or jars and fill starting with the Aspen Crunch Crumble. 
  • Add ingredients in the following order: yogurt, banana cream, honey, almond butter, crumble, and repeat.

Flavor Profile: Sweet and buttery.
Type We Use: Marcona Almonds.
Preparation: Each almond is sprouted then some are sliced for our granola. The rest are slowly toasted whole.

We Get Ours From: Costa Rica.
Flavor Profile: Aromatic, sweet, creamy.
Type We Use: Cavendish Bananas.
Preparation: Each banana is pealed then hand-cut with fine Japanese stainless steel into paper-thin circular slices.

Preparation: Each date is pitted leaving behind the syrupy shell, which is hand-cut to dry into small bite-size pieces.

Dates are small, soft, flavorful fruits that taste as sweet as maple syrup while remaining completely natural. They’re a good source of vitamin B6, potassium, manganese and fiber. A single date palm can produce over 150 pounds of dates each year!
