My name's Jack. In 2011 I started Aspen Crunch from a high school class with the dream to cook the world's most unique, healthy, and gourmet snacks each and every day.

What a journey it's been. Inspired by the education Aspen Crunch gave me, we continue to be run by Aspen High School student interns who're developing skills to launch their own ideas. I'm excited just thinking of what they'll build!

Aspen Crunch specializes in batch-crafted artisanal healthy snacks, dehydrated at under 118°F. When cooking our ingredients, we take delicate care to preserve their nutritional value while bringing out their intense flavors. We love dehydration because it keeps the ingredients’ nutritional profile intact, making the healthiest and most artistic way to make snacks.

Dehydrated foods are ideal for healthy snacking at home or on the go, for the adventure seeker in need of an energy-boosting snack, and the home chef eager to dive into the wonderful health benefits of fruits, vegetables, super berries and more.

How Dehydration Works

Dehydration uses gentle temperatures (90-118°F), minimally elevated over a long period of time to remove moisture from food. In order for a food to qualify as dehydrated, 95% of its moisture must be removed. Aspen Crunch has less than 1% water content in its snacks. 

Dehydration is a delicate process where original water and sugar content, surface area, temperature and humidity, and molecular gastronomy are all taken into account. When creating a new snack, we go through dozens of iterations before landing on the perfect combination of thickness and size of each slice, and the temperature at which the dehydrator is set. The end result is a perfectly dehydrated snack full of intense flavor and optimal texture.

Some people ask, is dehydration new? The answer: no. In fact, it's the oldest known method of food preservation and the preferred method used by Aspen Crunch to make all of our tasty, nutritional snacks.

Molecular Gastronomy

Molecular gastronomy is fun. Some define molecular gastronomy as the art & science of choosing, preparing, and eating good food. Others have defined molecular gastronomy as the scientific study of flavor. 

Why is Aspen Crunch interested in molecular gastronomy?

Molecular gastronomy explains the chemical reasons behind ingredients. Since the aroma of foods are so important to our perception, we may come up with the following conclusions: If the major volatile molecules of foods are the same, they might taste (and smell) nice when eaten together.

Basic Concepts

80% of a tasting experience comes from smell. Only 20% of the tasting experience comes from taste. Our tongue has about 9,000 taste buds that are capable of detecting sweet, salty, sour, and bitter tastes. In comparison, we have around 5-10 million cells or receptors capable of detecting smell.

I am writing in regards to the wonderful things you have done for my son, Dylan. Dylan is 10 years old & has diabetes. It has been a challenge to say the least in finding great tasting, appropriate sweet treat options to accompany his needs. My mother in law discovered you all & with one bite of Aspen Crunch Mountain Munch; that's all it took! We couldn't be more satisfied! Mountain Munch on Maroon Pass

I had my first bag of Aspen Crunch this summer while visiting the farmer's market. It was delicious and helped me get over the Maroon Pass. Seasonality: June-September.
We Get Ours From: Palisade, Colorado.
Flavor Profile: Sweet and slightly tart.
Type We Use: Freestone Peaches.
Preparation: Each peach is pitted then hand-cut into thin crescents, creating a sweet center and tart outer layer.

What’s so special about peaches besides their delicious summer taste? For starters, they’re low in calories and packed with numerous health-promoting compounds, minerals, and vitamins. Benefits include healthy aging and protection against the disease processes.

We Get Ours From: Fresno, California.
Flavor Profile: Extra sweet caramel notes.
Type We Use: Black Mission Fig.
Preparation: Each fig is stemmed then diced before drying to create small and sweet bite-size pieces.

Figs are known for being a healthy and versatile ingredient that can be used in sweet and savory dishes alike. Figs are rich in minerals including potassium, calcium, magnesium, iron and copper and are a good source of antioxidant vitamins A and K that benefit health and wellness.

Flavor Profile: Sweet and creamy.
Type We Use: Ataulfo Mango.
Preparation: Each mango is delicately pitted then we carefully filet the juicy fruit from its protective layer.

Bite into a piece of mango for an instant burst of summer. Not only is their flavor incredible, they’re also a great source of vitamins A, C, and B6, as well as potassium, magnesium, calcium and fiber.

We Get Ours From: Hawaii + Costa Rica.
Flavor Profile: Extra sweet, low acidity.
Type: Maui Gold, Costa Rican Pineapple.
Preparation: Costa Rican pineapple is thinly butterfly-cut vs. Maui Gold which is hand-chopped into bite-size pieces.

Did you know that Hawaii produces about 1/3 of all pineapple in the world? Pineapples are a sweet and juicy fruit full of vitamin C, manganese, fiber, and bromelain, an enzyme found only in pineapple that reduces inflammation and speeds up healing time.

We Get Ours From: Mecca, California.
Flavor Profile: Rich maple notes.
Type We Use: Medjool Dates.
Preparation: Each date is pitted leaving behind the syrupy shell, which is hand-cut to dry into small bite-size pieces.

Dates are small, soft, flavorful fruits that taste as sweet as maple syrup while remaining completely natural. They’re a good source of vitamin B6, potassium, manganese and fiber. A single date palm can produce over 150 pounds of dates each year!

We Get Ours From: Anatolia, Turkey.
Flavor Profile: Honey-sweet, slightly tart.
Type We Use: Morus Alba Mulberry.
Preparation:  Each mulberry is sorted, dried, and paired with goji and golden berries.

Mulberries look very similar to blackberries, but they’re actually related to figs! They’re sweet and impressively nutritious, containing many vitamins, minerals, and nutrients that can lower cholesterol, reduce high blood sugar, and help protect against diseases.

We Get Ours From: Qinghai, China.
Flavor Profile: Tart and slightly sour.
Type We Use: Lycium Barbarum Goji.
Preparation: Each goji berry is sorted, dried, and paired with mulberries and golden berries.

Also know as wolfberries, goji berries are an incredible super-food that aid in disease prevention and eye health. Goji berries have been studied for their fertility promoting qualities.

We Get Ours From: Andes, Peru.
Flavor Profile: Intensely tart, tropical.
Type We Use: Peruvian Golden Berry.
Preparation:  Each golden berry is sorted, dried, and paired with mulberries and goji berries.

Also known as a gooseberry, golden berries are antioxidant rich and can help enhance heart, liver, and kidney health. Golden berries also support immune system health and aid in the prevention plus management of diseases.

We Get Ours From: Mediterranean Regions, Spain.
Flavor Profile: Sweet and buttery.
Type We Use: Marcona Almonds.
Preparation: Each almond is sprouted then some are sliced for our granola. The rest are slowly toasted whole.

Almonds make for a great high-calorie/protein snack that will fill you up, while also providing tons of nutrients. They’re rich in vitamin E, monounsaturated fats, fiber, minerals, and flavonoids. They benefit heart/gut health, and can reduce inflammation.

We Get Ours From: Bronte, Italy.
Flavor Profile: Rich with earthy notes.
Type We Use: Bronte Pistachio.
Preparation: Each pistachio is shelled, sprouted, and slowly toasted in small batches to derive a hearty crunch.

Pistachios are lower in fat than most nuts yet high in nutrients such as fiber, unsaturated fatty acids, and antioxidants. As their nutritional profile suggests, they can play an important role in improving metabolic conditions such as type 2 diabetes and weight gain.
